1.Frying

Breading and frying a freshly caught fish is as good as it gets. For the novice fisherman, make sure that the butter is extra hot but not yet burning. Also, make sure that the fish is well coated in batter. 2.Grilling

At first glance, grilling would seem to be the easiest way to handle your fish. A newbie might assume that grilling fish is the same as grilling steaks or burgers. Unlike fowl or cattle, fish tends to secret most of its own juices when cooked. On a grill the delicious juice drips into the coals.

To prevent losing the moisture, first coat the fish with oil. The oil will seal a part of the moisture inside. Second, keep an eye on the fillets and turn them as soon as a cut would reveal that the fresh fish is cooked halfway through. After being flipped, watch the fish carefully. Remove the fish as soon as it is cooked through.

An option to basting the fish with oil is to wrap it in aluminum foil. The aluminum foil will keep the moisture and marinate the fish in its own moisture. Placing herbs and spices inside the foil with the fish enhances the grilling process and the fish itself.

3.Baking

Baking is the best option for the fisherman who does not want to watch over the fish during cooking. The fisherman can prepare the marinade and pre-heat the oven, then pop the fish into the oven for a predetermined amount of time. You may want to check on the fish from the time to time, ensuring that you don’t overcook the fish.

Cooking with Cream: Pasta Perfection


It is quick and relatively easy to make a cream sauce for pasta or any number of dishes. Here’s how to make a delicious creamy base you can then build on by adding additional flavours.

Start by melting a couple of tablespoons of butter into a pan. Add a couple of tablespoons of flour to the melted butter, stirring until it has formed a pasty consistency. This is known as a roux (”roo”).

Over a low heat, slowly add a couple of cups liquid. Choose from milk, half and half (a milk product with half milk and half cream), heavy cream, low fat cream, or cream created specially for cooking. You can also use a combination of these liquids with broth or white wine.

Stir your liquids on a low heat until the flour mixture is dissolved and then allow this mixture to thicken. The flour needs to cook to eliminate that powdery taste. Do NOT boil – the cream will curdle. Keep the temperature low.

When your creamy sauce is ready you can add cheese, sautéed vegetables, greens, tomatoes, meat, herbs and various seasonings to create a variety of different creamy sauces. Here’s an idea to get you started.

Easy Chicken Alfredo

Ingredients

400g of pasta (fettuccine, penne, shells or bows work well)
1 tablespoon cooking oil
4 tablespoons butter
1kg chicken breasts, diced
1 onion, diced
400g mushrooms, sliced or diced
1 teaspoon of garlic, minced
2 cups milk
2 tablespoons flour
1 cup Parmesan cheese, grated
150ml cream, thickened
100g green vegetables (broccoli, baby spinach, peas etc)

Preparation
Boil a large pot of water with a pinch of salt and a tablespoon of cooking oil (the oil stops the pasta from sticking together). Add the pasta to the boiling water and cook until al dente, drain, rinse and set aside.

While the pasta is cooking, in a large frying pan, on medium heat, melt 2 tablespoons of butter and add the garlic, mushrooms and onion. Sauté the lot until the onions are translucent. Add the chicken pieces and pan fry till it loses its pink colour.

Remove the chicken, garlic, mushrooms and onions from the frying pan or move to the side. Add the other 2 tablespoons of butter and melt. Add the flour and mix into the melted butter. Heat till flour is cooked and no longer tastes powdery.

Over a low heat, slowly add the cream and the milk to the cooked flour mixture. Add the Parmesan cheese and allow the sauce to thicken. Add the chicken and mushroom mixture back into the sauce. Stir well. Add the vegetables and heat through. Put pasta into dishes and spon the chicken alfredo sauce over the pasta. Eat and enjoy!

This recipe can be altered to make an alfredo-type of lasagne. Make the sauce with the sautéed garlic, onions and mushrooms, but leave out the chicken. Cook the chicken separately and add a hint of Italian seasoning. When the sauce is ready, ladle a small amount into the bottom of a 9×13 baking dish. Place a sheet of quick-cooking lasagne on top. Add a layer of chicken and ladle more sauce on top of the chicken. Add another sheet of lasagne and repeat the layers until the casserole is topped with a layer of sauce. Sprinkle additional parmesan cheese on top and bake for 45 minutes at 175C (350 F or gas mark 4). Stand for five minutes after cooking then slice and serve with a green salad. Yum!

Below are some recipes using low fat cream products that are flavoursome and certain to be enjoyable.

Easy Low Fat Cream Cheese Frosting

225g low fat cream cheese
1/2 cup icing sugar
60g butter

Bring the low fat cream cheese and butter to room temperature, and then beat the cream cheese and butter together until the mixture is a uniform pale yellow instead of marbled yellow and white. Add the icing sugar slowly until blended. Use the icing mixture to frost a cake or biscuits and then be sure to refrigerate the leftovers. This recipe will frost one average-sized carrot cake.

Low Fat Whipped Cream

470ml light cream
Dash of cream of tartar
2 tbsp sugar

Chill the cream until it is on the verge of forming ice crystals. Pour it into a stainless steel bowl that has been immaculately cleaned (any bit of soap residue will prevent the peaks from forming.) Using a whisk or an electric mixer beat the cream until soft peaks form. At this point, sugar may be added as well as brandy, cinnamon or other flavourings. Continue to beat the cream until the peaks are at the desired stiffness. Cream of tartar will allow the peaks to become stiffer. Use on top of a favourite pie or a bowl of fruit. Be sure to refrigerate the leftovers.

Savoury, Low-Fat, Sour Cream Dip

2 cups low fat sour cream
1/4 cup minced red capsicum
1/4 cup spring onions, chopped
1/4 cup parmesan cheese, shredded
1 tsp garlic, minced
1 tsp dry basil
Black pepper to taste

Bring the low-fat sour cream to close to room temperature. Blend all ingredients in a medium-sized bowl. (The capsicum can be chopped rather than minced, but the dip works better if it is minced as the flavour blends better.) Taste the mixture and add more garlic, basil and black pepper, if necessary. When satisfied, pour the mixture into a decorative bowl and decorate the top with a sprinkle of remaining spring onions and chopped fresh basil. Serve close to room temperature with corn chips or crudités. Be sure to refrigerate the leftovers.

Eggs whites are one way to enjoy eggs and still stay health conscious. An herbed spinach egg white omelet can easily be made in about ten minutes. Still tasty and good for the body and soul, this low fat recipe cannot be turned down. The ingredients include:

3 egg whites
1 tablespoon nonfat milk
1/2 tsp dried mixed herbs
Freshly ground black pepper
3/4 cup chopped fresh baby spinach

1 tablespoon reduced-fat shredded sharp cheddar or grated parmesan
In a bowl combine and stir together the egg whites, herbs and milk together. Put medium heat to a cooking pan that has been coated with non stick cooking spray.
Next put the chopped spinach into the pan and as it begins to wilt slowly pour the egg white mixture on top. Watch the mixture go to the edge of the pan. When it begins to set on the edges take a spatula to the omelet and lift allowing the remaining eggs whites to run from underneath. Once the omelet is set fully sprinkle cheese on top if desired and enjoy.

Shop local.  Support local farmers.  You can be assured that the produce is fresh since they don’t have to travel far.  Fruits and vegetables get bruised when traveling long distances.  Or, go straight to the farm gate to buy your vegetables and fruits.  Farm gate prices are so much cheaper than market or grocery prices.  Bring a friend along so you can share your food finds.

Grow your own herbs or spices.  Using herbs and spices in your cooking can really make a difference in taste.  Fresh or dried, herbs and spices add a depth of flavor to your cooking.  You can grow your own herb garden using various techniques, including hyrdroponics.  Or, if you have the space, create room in the backyard for herb and spice growing.  Better yet, grow your own vegetables!  Now you’ll never run out of your favorite greens.

If you must buy, buy your herbs and spices whole.  Grind them up using a mortar and pestle whenever you need them.  For more flavorful herbs and spices, use them within six months or less.  After that long a period of time, the herbs and spices slowly lose their flavor.  If you’re frequently cooking for a large family or if you just use a lot of your favorite, buy the larger containers for more dollar value.  If not, buy the smaller containers as these will run out before the six month period, retaining maximum freshness and flavor.

Less meat will mean less expensive meals.  If you must have meat though, avoid the more expensive choice or premium cuts.  Tougher but no less flavorful cuts include chuck roast, flank steak and London broil.  You can cook beef stews and other beef based recipes for less than the usual.

Check out your local market.  Groceries tend to be more expensive than local markets.  You’re more likely to get fresher fruits, vegetables, fish and meats there.  Forge a relationship with a seller there and you just might get the items cheaper than the going rate.  How can you beat fresher and cheaper food items?

Check out the ethnic markets and grocers in your area.  Look around and you’ll find a lot of good deals that your grocery may not be able to offer you.  You no longer have to go to a Korean restaurant to satisfy your kimchi craving.  There are several variants available at every Korean grocery.  Love Chinese food but trying to save on take out?  Hit the Chinese grocery and look up recipes on the web.  You save money and enhance your cooking skills.

Frozen or Fresh? The Benefits of Frozen Fish


It is a fairly widespread belief that frozen fish is not preferable over the fresh variety. This is however somewhat of a common misconception and in reality there are some facts that are commonly overlooked. In actuality there are some benefits to both fresh fish and frozen fish.

There has been a relatively more recent argument that frozen fish is actually far fresher than the fresh fish that one can generally purchase. When the fish is frozen on capture, it retains more freshness.
